Located in the historic center of the city, Mica Panelle aims to provide an extraordinary gastronomic experience centered around the famous Palermo dish: the panelle sandwich. Mica Panelle is not just a simple eatery, but a fascinating hybrid of experimental cuisine and street food that immerses itself in the roots of Sicilian culinary tradition. The menu, created by chef Gianluca Bonsignore, features a wide range of unique creations that showcase the core product of the house: panelle. Bonsignore has spent months researching and experimenting with new recipes, resulting in unprecedented flavors such as cuttlefish ink panelle, mussel panelle, and sausage and broccoli rabe panelle. In addition to savory creations, Mica Panelle also offers sweet panelle and vegetable fritters, all made with the same high-quality chickpea flour. The philosophy behind the project is to start with the preparation of the classic panelle, cooked according to ancient Palermo tradition, but with a meticulous attention to ingredient selection. The panelle are made with stone-ground organic chickpea flour, ensuring authenticity and quality in every bite.
